I've had oatmeal on the brain. (Winter and THIS, likely contributing factors.) I decided to whip up a batch of pumpkin oatmeal this morning.
Pumpkin Oatmeal (1 serving)
• ½ cups Old-Fashioned Oats
• 1 cup Milk Or Milk Alternative
• ¼ cup Pumpkin
• ¼ teaspoon Cinnamon
• ⅛ teaspoon Ground Ginger
• 2 pinches Nutmeg
• 1 pinch Cloves
• 2 pinches Salt
• ¼ cup Raisins Or Dried Cranberries (I used Golden Raisins)
• ½ cups Old-Fashioned Oats
• 1 cup Milk Or Milk Alternative
• ¼ cup Pumpkin
• ¼ teaspoon Cinnamon
• ⅛ teaspoon Ground Ginger
• 2 pinches Nutmeg
• 1 pinch Cloves
• 2 pinches Salt
• ¼ cup Raisins Or Dried Cranberries (I used Golden Raisins)
Preparation Instructions
Place the ingredients into a saucepan over medium heat and stir to combine. Just as the mixture begins to boil, reduce heat to low and simmer, stirring occasionally, about 5 minutes. When done, remove from heat and pour into a bowl. Top with a drizzle of honey, a sprinkle of walnuts and milk if desired.
It was every bit as delicious as it sounds. (The image above, straight out of the camera... no tweaking.)
