Our weekly Bible study group just finished up Esther: It's Tough Being a Woman and it was during the study that we were first introduced to Hamantashen. These delightful little cookies can be purchased at Cecil's Deli in St. Paul and are available seasonally at Fishman's in St. Louis Park. If you're feeling adventurous and like to bake, here's a recipe a few of the ladies used to make them from scratch:
Hamantashen (Haman's Ears)
2 sticks butter (softened)
2 cups sugar
2 large eggs
2 teaspoons vanila
4 teaspoons baking powder
4 cups wheat flour or 2 cups white all-purpose flour and 2 cups wheat (all white works well, too)
FILLING: You may use apricot, raspberry, or strawberry preserves in addition to fruit butters or pie filings. Traditional fillings are poppy seed and prune.
1. Cut butter into sugar. Blend thoroughly. Add eggs and blend thoroughly. Add flour, 1/2 cup at a time, blending thoroughly between each.
2. Put the batter in the refrigerator overnight or at least a few hours.
3. Roll it out to about 1/4-inch thickness and then cut circles with a cookie cutter or drinking glass. (Make them at least 3-inch circles.)
4. Put a tablespoon of filling in the middle of each circle. Fold up the sides to make a triangle, overlapping the sides as much as possible so only a little filling shows through the middle.
5. Bake at 375 degrees for about 10-15 minutes, until golden brown.
Too, I wanted to share with you some great Bible studies I found for teens. Working through a study with your child is a great way to stay connected during those turbulent teen (and preteen) years. In addition to helping them navigate confusing emotions, they'll receive valuable direction and guidance from God's Word.
